Craisin Muffins - My Recipe Treasures (2024)

Jump to Recipe

Craisin muffins are a great start for a new day or a perfect way to end the day. I love them for breakfast or dinner, or they would also make a wonderful afternoon snack for when the kids come home and they are starving! They are moist and delicious.

So today, my sister, my daughters, my granddaughters and I, took my friend out to lunch. It was very tasty and very entertaining when you have a 4 year old, a 2 year old and a new baby! We enjoyed a nice quiet lunch. Ha ha.

There was all kinds of food. My granddaughters had french toast with scrambled eggs and sausage. However the 2 year old ate almost nothing. When we got into the car, there was one of these muffins left and while we were talking, she managed to get it and go to town on it.

I must say that they might not be something that you want to give a 2 year old in the car unless you have a vacuum close by. She did eat most of it. Hmm, I think she has a nose for smelling yummy food. And so if you are wondering if 2 year olds like Craisin muffins, the answer is yes.

I love putting nutmeg, cinnamon and ginger into my baking because I know that they are good for you. Plus they make different recipes taste so delicious. The Craisins and the orange flavor go together so well.

When I got home from lunch, I needed to deliver some food drive bags with my scouts. So we headed out, and I was so happy that the weather was wonderful. It was 53 degrees and the birds were singing.

What Are Craisins?

  • Dried cranberries, are also known as “Craisins”.
  • Dried cranberries are made with added sugar because without a sweetener of some kind, they are very sour.
  • Completely unsweetened dried cranberries are too tart for most people.

One of the scouts has only lived here for about 6 months and he was also helping. He took a bag up to his grandma’s house and he didn’t come out. So I assumed that he was going to stay at grandma’s for awhile.

The rest of the boys finished the rest of the houses and we went home. What I learned was that this young man came out looking for us 30 minutes later and could not find us and wasn’t sure of the way home.

It was only around the corner and I had no idea that he did not know how to get to his grandma’s house. Pretty soon, he came in my house crying because he was lost. Then he realized that his house was only four houses away from me.

So never assume that young kids know where they live or that grandma is going to take them home. When you are in charge, make sure that they make it home safe and sound.

FAQs

What is the secret to high muffins? ›

The idea here is to start the muffins in a very hot oven for just a short amount of time. This activates the baking powder and allows the muffins to shoot up in height quickly. We then turn the heat down and continue to cook for longer. This is done to avoid over-browning and overbaking.

Should I use baking soda or baking powder in muffins? ›

Baking soda is most commonly used in cookie and muffin recipes. Baking powder, however, already contains an acid and a base and has a more neutral taste, which works great when baking cakes and bread.

At what temperature are muffins usually baked? ›

Ideal Muffin Cooking Temperature

That being said, the standard oven temperature for baking desserts like quick breads and muffins is commonly set to 350 degrees Fahrenheit. Setting your oven to this temperature will almost always produce a well-cooked muffin recipe.

How much baking soda do you put in muffins? ›

The general rule of thumb for how much baking powder or baking soda is 1 teaspoon per cup of flour. I usually use a measuring cup the first couple of times I make something so I can get a rough idea of how many cups of flour I'm putting in so I can roughly figure out how much baking powder I should use.

What does adding an extra egg do to muffins? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

Why are my muffins dense and not fluffy? ›

Over-mixing – If you mix the muffin batter too much it can create a VERY dense muffin with huge pockets of air inside.

What happens if you put too much baking soda in muffins? ›

It's important not to use too much baking soda in recipes, as it can result in a metallic, soapy flavor. It is much more powerful than baking powder – you only need about 1/4 teaspoon baking soda per cup of flour to leaven baked goods.

What happens if you don't put baking powder in muffins? ›

Baking powder, in particular, is one of those ingredients you can easily run out of without noticing, but when it comes to baking, it does a very particular job, and can be difficult to replace. Most baked goods need a leavening agent to make them rise, and if you leave it out, your cake or your cookies will fall flat.

What happens if you add too much baking powder to muffins? ›

Too much baking powder can cause the batter to be bitter tasting. It can also cause the batter to rise rapidly and then collapse. (i.e. The air bubbles in the batter grow too large and break causing the batter to fall.) Cakes will have a coarse, fragile crumb with a fallen center.

What not to do when making muffins? ›

Here are some common mistakes that might be causing this:
  1. Over mixing the batter.
  2. Overfilling the muffin tray.
  3. Leaving the muffins in the pan after they have baked.
  4. Berries, nuts, and chocolate chips sink to the bottom.

Should I bake muffins at 350 or 375? ›

There's no question that the standard oven temperature of 350°F gets the job done for baking up muffins and quick breads.

How do you make muffins rise higher? ›

Start the oven on high

Bake your muffins at 400°F for the first 5 minutes, then drop the temperature to the more standard 350°F for the remainder of the bake time. This method sparks the leavening agents (especially baking powder) in the batter to react quicker, creating that gorgeously risen top.

What happens if you make muffins without baking soda? ›

Baking soda is a leavening agent. It creates air bubbles (technically, carbon dioxide) in your batter, when heated. Without it, your baked goods will not rise to the desired levels and the airy texture you're looking for will be adversely affected.

Will muffins rise without baking soda? ›

Unless you have no other option, you really should use a leavening substitute. Other baked goods that rely more on rising — like cakes, muffins, and breads — cannot be made without baking soda or an acceptable alternative.

How much baking soda do I use for 2 cups of flour? ›

A good rule of thumb, according to Corriher, is that 1 cup of flour can be leavened by ¼ teaspoon baking soda or 1 to 1¼ teaspoons of baking powder.

How do I get my muffins to rise higher? ›

Start the oven on high

Bake your muffins at 400°F for the first 5 minutes, then drop the temperature to the more standard 350°F for the remainder of the bake time. This method sparks the leavening agents (especially baking powder) in the batter to react quicker, creating that gorgeously risen top.

How do you make high domed muffins? ›

But if you want super domed muffins with seriously tall tops, rest the batter for an hour! This will allow the flour to hydrate and absorb the liquids in the batter more fully, leading to taller domes.

How do you elevate muffins? ›

Add a Sweet Topping

You can top muffins with a dusting of cinnamon and sugar, a handful of chopped nuts or pumpkin seeds, or a daub of Nutella®* or frosting. But our favorite way to add a finishing touch to muffins is with a streusel topping.

How do you make cupcakes rise high? ›

Place your cupcakes into a preheated 400 degree F oven, no matter what temperature the recipe calls for. Most cupcake recipes suggest 350-375 degrees F, which results in a flat top. When you increase the temperature, the edges of the cupcakes will solidify first, allowing the center to rise, creating a domed top.
