I took a little break last week to meetfriends and family for a relaxing vacation in Washington. Ingredients

Scale

  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 2 large eggs
  • 2 medium bananas (ripe)
  • 1 1/4 cups whole wheat flour
  • 1/2 cup ground flaxseed
  • 3/4 teaspoon baking soda
  • 2 ounces unsweetened chocolate (60-70% cacao)
  • 1 kiwi (chopped bite size)
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 375ºF.
  2. In a blender or food processor, add maple syrup and slowly add coconut oil to the mixture until it has emulsified and looks thicker. Add eggs and bananas and blend for 10 seconds. Set aside.
  3. In large bowl, add whole wheat flour, ground flaxseed and baking soda and mix well using a whisk or a spoon.
  4. Add banana mixture to the bowl along with kiwi, chocolate and walnuts. Mix well.
  5. Pour mixture into a loaf pan greased with a little butter or coconut oil.
  6. Bake for 35-40 minutes.
